​Evaluation of Essential Oils as a Hurdle for Ambient Temperature Storage of Chicken Patties

Background: Clove bud oil (CBO) and oleoresin rosemary (ORM) possess antioxidant antibacterial properties are widely used as natural preservatives in meat products. The present study was conducted with the objective of evaluating essential oils CBO ORM a hurdle for extending shelf life chicken patties at ambient temperature storage. Methods: viz. 0.05% level (T1) 0.1% (T2) their combination (CBO 0.1%) (T3) were incorporated basic formulation along control (C) cooked product quality packed food grade pet-poly co-extruded film pouches stored (30±2°C) assessed. Result: Upon storage, terms sensory evaluation, T3 spoiled on 5th day other samples 3rd Addition significantly (P less than 0.05) enhanced DPPH scavenging effect. TBARS tyrosine values all treatments increased linearly storage period. inhibited microbial load during period maintained odour score acceptable even might be applied one hurdles adopting ‘Hurdle Technology’ patties.
